Potato and Leek Soup


The cold weather is starting settle in after a few days of pouring rain. Our laundry is damp, my shoes are soaked and I can’t feel my feet. But what a perfect excuse to stay home and get swallowed in a sea of blankets. Aside from animal collecting and ark building, Edwina has been making up soup recipes. Here’s a super easy one!


  • 600mL light cream or milk
  • 1.5kg of chopped potato (4 large potatoes)
  • 3 cups of chopped leek ( approx. 1-2 leeks)
  • 1.5L vegetable stock
  • 50g butter

Prep time: 10 minutes
Cooking time: 30 minutes
Servings: “Too much”

Untitled-1Step 1: Melt 50g of butter in a large saucepan. Add leeks and fry until golden. Add the potatoes and fry off for a bit.

Untitled-3Step 2: Pour in 1.5L of vegetable stock, or until the potatoes and leeks are covered. Allow to boil for 20 minutes or until the potatoes are tender. Turn off heat and allow to cool.

Untitled-4Step 3: Using a blender or a stick mixer puree the soup, and then transfer it back into the saucepan over medium heat.

Untitled-5Step 4: Add 600mL of light cream or milk (depending on the type of consistency you like), stir well. Season with salt and pepper as required. Serve hot with a side of toasted sourdough.
